  • 2.5 cups diced cooked ham leftovers work great
  • 1 pound dried navy beans soaked overnight
  • 1 tablespoon olive oil
  • 1 cup chopped onion about 1 medium onion
  • 3 cloves garlic minced
  • 4 cups chicken broth low sodium is preferable

Instructions

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until onions are translucent.
  • Add diced ham to the pot and cook for another 2 minutes.
  • Pour in the chicken broth and add the soaked beans.
  • Bring to a boil, then reduce heat to low and simmer for 90 minutes or until beans are tender.
  • Adjust seasoning with salt and pepper to taste before serving.

Notes

This dish pairs well with cornbread or a simple green salad.
