  • 1.5 pounds chicken breast boneless and skinless, cut into cubes
  • 4 cups frozen hash browns thawed
  • 1 can cream of chicken soup 10.5 ounces
  • 1.5 cups sour cream
  • 2 cups shredded cheddar cheese divided
  • 0.5 cup onion chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add olive oil. Cook the chicken cubes until they're browned and cooked through.
  • In a large mixing bowl, combine cooked chicken, hash browns, cream of chicken soup, sour cream, 1.5 cups of cheddar cheese, and chopped onion. Season with salt and pepper.
  • Transfer the mixture into a greased 9x13 inch baking dish and spread evenly.
  • Sprinkle the remaining cheddar cheese on top.
  • Bake in the preheated oven for 30-35 minutes or until bubbly and golden brown on top.

Notes

Garnish with chopped parsley for extra flavor and color.
