Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add olive oil. Cook the chicken cubes until they're browned and cooked through.
In a large mixing bowl, combine cooked chicken, hash browns, cream of chicken soup, sour cream, 1.5 cups of cheddar cheese, and chopped onion. Season with salt and pepper.
Transfer the mixture into a greased 9x13 inch baking dish and spread evenly.
Sprinkle the remaining cheddar cheese on top.
Bake in the preheated oven for 30-35 minutes or until bubbly and golden brown on top.
