  • 1.5 cups milk for cake mix preparation
  • 3 eggs for cake mix preparation
  • 0.5 cup vegetable oil for cake mix preparation
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 can evaporated milk 12 oz can
  • 1 cup granulated sugar
  • 0.5 cup butter unsalted
  • 4 oz semi-sweet chocolate chopped
  • 2 cups whipped cream store-bought or homemade
  • 2 tbsp instant chocolate pudding mix
  • 0.5 cup milk for pudding mix
  • 2 tbsp chocolate shavings for garnish

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Prepare the chocolate cake mix according to package instructions using milk, eggs, and vegetable oil. Pour batter into the prepared baking dish and bake for 30-35 minutes. Allow to cool completely.
  • In a saucepan over medium heat, combine the evaporated milk, granulated sugar, butter, egg yolks, and vanilla extract. Cook, stirring frequently, until thickened. Remove from heat and stir in shredded coconut and chopped pecans. Let it cool.
  • In a separate bowl, melt the chopped semi-sweet chocolate and let it cool slightly. In a large mixing bowl, beat together the melted chocolate, pudding mix, and milk until smooth. Fold in 1 cup of whipped cream.
  • To assemble the trifle, crumble the cooled cake into pieces. In a trifle bowl, layer 1/3 of the cake pieces, followed by 1/3 of the coconut-pecan filling, and then 1/3 of the chocolate mousse. Repeat this process, ending with a layer of chocolate mousse on top.
  • Top the trifle with the remaining whipped cream and chocolate shavings. Chill for at least 2 hours before serving.

Notes

For an extra touch, try using dark chocolate for the shavings. This trifle can be prepared a day in advance, allowing the flavors to meld beautifully.
