Preparation Steps
Preheat a cast iron skillet over medium-high heat until very hot.
Pat the ribeye steaks dry with paper towels and season both sides with salt and freshly ground black pepper.
Add olive oil to the skillet and carefully place steaks in the pan. Sear each side for about 4-5 minutes until a brown crust forms.
Mix minced garlic and grated Parmesan in a small bowl.
Spoon the garlic-Parmesan mixture evenly over the steaks and top with pats of unsalted butter.
Transfer skillet to a preheated oven at 400°F (204°C) and cook for an additional 3-5 minutes until cheese is melted and steaks reach desired doneness.
Remove steaks from oven and let rest for 5 minutes before serving.
Notes
Resting the steak allows juices to redistribute for maximum juiciness. Serve with a side of steamed vegetables or a fresh salad.
