  • 4 pieces Ribeye steaks about 8 ounces each
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 0.75 cup Parmesan cheese freshly grated
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
  • 1.5 tablespoons unsalted butter for finishing

Instructions

Preparation Steps

  • Preheat a cast iron skillet over medium-high heat until very hot.
  • Pat the ribeye steaks dry with paper towels and season both sides with salt and freshly ground black pepper.
  • Add olive oil to the skillet and carefully place steaks in the pan. Sear each side for about 4-5 minutes until a brown crust forms.
  • Mix minced garlic and grated Parmesan in a small bowl.
  • Spoon the garlic-Parmesan mixture evenly over the steaks and top with pats of unsalted butter.
  • Transfer skillet to a preheated oven at 400°F (204°C) and cook for an additional 3-5 minutes until cheese is melted and steaks reach desired doneness.
  • Remove steaks from oven and let rest for 5 minutes before serving.

Notes

Resting the steak allows juices to redistribute for maximum juiciness. Serve with a side of steamed vegetables or a fresh salad.
