Preparation Steps
Heat olive oil in a large skillet over medium heat. Add chicken strips and cook until browned and cooked through, about 6-7 minutes. Remove from skillet and set aside.
In the same skillet, add garlic and mushrooms. Cook until mushrooms are browned and tender, about 4-5 minutes.
Stir in dried thyme, salt, and black pepper. Add chicken broth and bring to a simmer.
Add the cooked chicken and spinach to the skillet. Cook until spinach is wilted and everything is heated through, about 2-3 minutes. Serve warm.
Notes
For extra flavor, consider adding a squeeze of lemon juice over the dish before serving.
