Instructions
Preparation Steps
Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and set aside.
While potatoes cook, heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper.
Add chicken thighs to the skillet and sear until golden brown on both sides, about 6-7 minutes per side. Remove from skillet and set aside.
Lower heat to medium, add butter and garlic to the skillet. Cook until garlic is fragrant, about 1-2 minutes.
Return chicken thighs to the skillet, spooning garlic butter over them. Cover and cook for another 10 minutes until cooked through.
Mash cooked potatoes with warmed milk, remaining butter, salt, and pepper until smooth and creamy.
Serve the garlic butter chicken thighs on a bed of mashed potatoes, garnished with fresh parsley.
Notes
For extra flavor, add a squeeze of lemon juice before serving. Leftovers keep well in the fridge for up to 3 days.
