  • 6 pieces bone-in chicken thighs
  • 4 tablespoons unsalted butter
  • 5 cloves garlic minced
  • 2 cups russet potatoes peeled and cut into chunks
  • 0.5 cup whole milk warmed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley chopped for garnish

Instructions

Preparation Steps

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and set aside.
  • While potatoes cook, heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper.
  • Add chicken thighs to the skillet and sear until golden brown on both sides, about 6-7 minutes per side. Remove from skillet and set aside.
  • Lower heat to medium, add butter and garlic to the skillet. Cook until garlic is fragrant, about 1-2 minutes.
  • Return chicken thighs to the skillet, spooning garlic butter over them. Cover and cook for another 10 minutes until cooked through.
  • Mash cooked potatoes with warmed milk, remaining butter, salt, and pepper until smooth and creamy.
  • Serve the garlic butter chicken thighs on a bed of mashed potatoes, garnished with fresh parsley.

Notes

For extra flavor, add a squeeze of lemon juice before serving. Leftovers keep well in the fridge for up to 3 days.
