  • 1 whole cauliflower medium size
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt adjust to taste
  • 0.5 teaspoon black pepper freshly ground
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon paprika
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Remove the leaves and core from the cauliflower, keeping the head intact.
  • In a small bowl, mix olive oil, minced garlic, salt, black pepper, dried thyme, oregano, and paprika.

  • Place the cauliflower in a baking dish and brush it with the olive oil mixture evenly.

  • Cover with aluminum foil and roast in the oven for 30 minutes.
  • Remove the foil and continue to bake for an additional 30 minutes, or until the cauliflower is golden brown and tender.
  • Drizzle the roasted cauliflower with lemon juice and garnish with fresh parsley before serving.
