Preparation Steps
In a large bowl, combine the mashed potatoes, cheddar cheese, green onions, flour, garlic powder, black pepper, and salt.
Shape the mixture into 1.5-inch balls. Roll each ball in the beaten eggs, then coat with bread crumbs.
Heat the vegetable oil in a deep fryer or heavy-bottomed pan to 350°F.
