Instructions
Preparation Steps
In a large pot, heat a tablespoon of oil over medium heat and sauté the garlic and ginger until fragrant, about 2 minutes.
Add the chicken thighs to the pot and brown on both sides for about 4 minutes per side.
Pour in chicken broth, then add carrots, celery, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
Remove chicken thighs, shred meat, then return to pot. Stir in lemon juice and cook for another 5 minutes before serving.
Notes
For added flavor, garnish with freshly chopped cilantro or parsley before serving.
