  • 1.5 pounds boneless skinless chicken thighs
  • 2 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 0.25 cup fresh ginger, grated about 1 inch piece
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

Preparation Steps

  • In a large pot, heat a tablespoon of oil over medium heat and sauté the garlic and ginger until fragrant, about 2 minutes.
  • Add the chicken thighs to the pot and brown on both sides for about 4 minutes per side.
  • Pour in chicken broth, then add carrots, celery, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Remove chicken thighs, shred meat, then return to pot. Stir in lemon juice and cook for another 5 minutes before serving.

Notes

For added flavor, garnish with freshly chopped cilantro or parsley before serving.
