  • 2 pounds sweet potatoes peeled and chopped
  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 0.5 cup heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 1 9-inch pie crust pre-baked

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • Boil the sweet potatoes in a large pot of water until tender, about 20-30 minutes. Drain and allow to cool slightly.
  • Mash the sweet potatoes in a large bowl until smooth.
  • Add melted butter, granulated sugar, brown sugar, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt to the mashed sweet potatoes. Mix well until a smooth consistency is achieved.
  • Pour the mixture into the pre-baked pie crust and smooth the top with a spatula.
  • Bake in the preheated oven for 45-50 minutes or until the filling is set and the top is slightly golden.
  • Allow to cool on a wire rack before serving.

Notes

For an extra touch, serve with whipped cream or a scoop of vanilla ice cream. This sweet potato pie can be stored in the refrigerator for up to 4 days.
