  • 2 cups sushi rice
  • 3 cups water
  • 4 sheet nori seaweed
  • 1 medium cucumber cut into thin strips
  • 1 medium carrot peeled and julienned
  • 1 medium avocado sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 0.5 teaspoon salt

Instructions

Preparation Steps

  • Rinse the sushi rice under cold water until the water runs clear.
  • Combine rice and water in a pot, bring to a boil then reduce heat and simmer covered for 10 minutes.
  • Mix rice vinegar, sugar, and salt until dissolved and gently fold into cooked rice. Let cool to room temperature.
  • Place a nori sheet onto a bamboo sushi mat, spread an even layer of rice over the nori leaving a 1-inch border at the top.
  • Arrange cucumber, carrot, and avocado strips horizontally along the bottom edge of the rice.
  • Using the bamboo mat, tightly roll the sushi away from you, pressing gently to shape.
  • Slice the roll into 6-8 pieces with a sharp knife and serve immediately.

Notes

Serve with soy sauce, pickled ginger, and wasabi for a complete sushi experience.
