Instructions
Preparation Steps
Place the chicken thighs in the bottom of the slow cooker.
Add peeled and chunked potatoes on top of the chicken.
In a small bowl, mix chicken broth, olive oil, minced garlic, thyme, salt, and pepper.
Pour the broth mixture over the chicken and potatoes.
Cover and cook on low heat for 4 hours or until chicken is tender and potatoes are cooked through.
Serve warm, garnished with fresh herbs if desired.
