  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1.5 tsp pumpkin pie spice blend of cinnamon, nutmeg, and cloves
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 cup pumpkin puree canned or fresh
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg, pumpkin puree, and vanilla extract to the butter mixture and mix until combined.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to 5 days. Perfect with a glass of milk or hot tea.
