  • 1.5 cups all-purpose flour sifted
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 1 cup pumpkin puree not pumpkin pie filling
  • 0.5 cup vegetable oil
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 0.25 cup milk optional for extra moisture

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together pumpkin puree, vegetable oil, eggs, and vanilla extract until well blended.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Add milk if using.
  • Pour the batter into the prepared baking pan and smooth the top.
  • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

For an extra touch, serve with a dusting of powdered sugar or a dollop of whipped cream.
