Instructions
Preparation Steps
Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, whisk together pumpkin puree, vegetable oil, eggs, and vanilla extract until well blended.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Add milk if using.
Pour the batter into the prepared baking pan and smooth the top.
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Notes
For an extra touch, serve with a dusting of powdered sugar or a dollop of whipped cream.
