  • 1.5 lb boneless skinless chicken breasts
  • 2 tbsp olive oil for sautéing
  • 1 cup chopped onion
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup diced tomatoes canned
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup chopped bell peppers any color

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic; sauté until softened, about 3-4 minutes.
  • Add chicken breasts and cook until lightly browned on both sides, about 5 minutes.
  • Stir in chicken broth, diced tomatoes, bell peppers, oregano, salt, and black pepper.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes until chicken is cooked through.
  • Remove chicken breasts, shred with two forks, then return shredded chicken to the pot and stir well.
  • Simmer uncovered for another 5 minutes to blend flavors. Serve hot.

Notes

Feel free to add your favorite vegetables or substitute chicken thighs for a juicier texture.
