Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat.
Add chopped onion and garlic; sauté until softened, about 3-4 minutes.
Add chicken breasts and cook until lightly browned on both sides, about 5 minutes.
Stir in chicken broth, diced tomatoes, bell peppers, oregano, salt, and black pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes until chicken is cooked through.
Remove chicken breasts, shred with two forks, then return shredded chicken to the pot and stir well.
Simmer uncovered for another 5 minutes to blend flavors. Serve hot.
