Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat.
Season chicken breasts with salt, pepper, garlic powder, and dried oregano.
Add chicken to the skillet and cook for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
In the same skillet, add orzo pasta and toast for 1-2 minutes, stirring frequently.
Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and broth is absorbed.
Slice the cooked chicken into strips.
Stir in cherry tomatoes, olives, feta cheese, lemon juice, and parsley into the cooked orzo.
Serve the orzo topped with sliced chicken and enjoy warm.
Notes
For a lighter option, swap feta cheese with reduced-fat cheese and use whole wheat orzo.
