  • 1 lb chicken breast
  • 1.5 cups orzo pasta
  • 2 cups chicken broth low sodium preferred
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup kalamata olives pitted and sliced
  • 0.5 cup feta cheese crumbled
  • 2 tsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper
  • 0.5 tsp salt
  • 0.25 cup fresh parsley chopped

Instructions

Preparation Steps

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt, pepper, garlic powder, and dried oregano.
  • Add chicken to the skillet and cook for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add orzo pasta and toast for 1-2 minutes, stirring frequently.
  • Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and broth is absorbed.
  • Slice the cooked chicken into strips.
  • Stir in cherry tomatoes, olives, feta cheese, lemon juice, and parsley into the cooked orzo.
  • Serve the orzo topped with sliced chicken and enjoy warm.

Notes

For a lighter option, swap feta cheese with reduced-fat cheese and use whole wheat orzo.
