Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Add cubed chicken breasts to the pot and cook until browned on all sides, about 5-7 minutes.
Pour in chicken broth, bring to a boil, then reduce heat to a simmer.
Add orzo pasta to the pot and cook for 8-10 minutes until tender.
Stir in lemon juice and zest, salt, and black pepper.
Add baby spinach and cook until wilted, about 2 minutes.
Remove from heat and serve hot.
Notes
