  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold and cubed
  • 0.25 cup granulated sugar
  • 1 large egg yolk for crust
  • 1 cup heavy cream
  • 0.75 cup granulated sugar for filling
  • 3 large eggs for filling
  • 0.5 cup fresh lime juice about 4-5 limes
  • 1 tsp lime zest freshly grated
  • 4 medium kiwi fruits peeled and sliced

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a food processor, pulse flour, sugar, and butter until mixture resembles coarse crumbs.
  • Add egg yolk and pulse until dough forms. Press dough into tart pan and chill for 10 minutes.
  • Bake crust for 15 minutes or until golden. Remove from oven and cool.
  • Whisk eggs, sugar, lime juice, lime zest, and heavy cream in a bowl until smooth.
  • Pour filling into cooled crust and bake for 15 minutes or until filling is set.
  • Let tarts cool completely, then top with sliced kiwi before serving.

Notes

Store tarts in the refrigerator and consume within 3 days for best freshness.
