  • 2 cups cooked shredded chicken preferably rotisserie chicken
  • 1.5 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 0.5 cup cream cheese softened
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Steam or blanch broccoli florets until tender but still crisp, about 4-5 minutes. Drain and set aside.
  • In a mixing bowl, combine heavy cream, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  • Add shredded chicken, broccoli, and shredded cheddar cheese to the cream mixture. Stir until combined.
  • Transfer mixture to a greased baking dish and sprinkle Parmesan cheese evenly on top.
  • Bake uncovered for 25-30 minutes, or until bubbly and golden on top.
  • Let cool for 5 minutes before serving. Enjoy your keto-friendly casserole!

Notes

This casserole can be made ahead and refrigerated for up to 2 days. Reheat covered in the oven.
