  • 3 lb corned beef brisket with spice packet
  • 1.5 cups water
  • 1 tbsp whole grain mustard optional
  • 1 large onion quartered
  • 3 cloves garlic minced
  • 4 large carrots peeled and cut into chunks
  • 6 medium potatoes quartered
  • 1 head green cabbage cut into wedges
  • 0.5 tsp black pepper freshly ground

Instructions

Preparation Steps

  • Rinse corned beef under cold water and place in the Instant Pot with spice packet, water, mustard, onion, and garlic.
  • Close the lid and set the pressure release valve to sealing. Cook on high pressure for 80 minutes.
  • Quick release the pressure. Add carrots, potatoes, and cabbage on top of the beef.
  • Secure the lid again and cook on high pressure for an additional 10 minutes.
  • Allow the pressure to release naturally. Slice the beef and serve with vegetables, seasoning with black pepper to taste.

Notes

You may serve with additional mustard or horseradish for an extra kick.
