This classic homestyle chicken and dumplings recipe combines tender chicken pieces with fluffy, soft dumplings in a rich, flavorful broth perfect for a comforting meal.
In a large pot, melt the butter over medium heat. Add diced onion, chopped carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
Add chicken thighs to the pot and pour in the chicken broth. Season with salt and black pepper. Bring to a simmer and cook until chicken is fully cooked, about 30 minutes.
Remove chicken from broth, shred the meat, and discard bones. Return shredded chicken to the pot.
In a bowl, mix all-purpose flour, baking powder, and a pinch of salt. Add water and milk gradually to form a soft dough for dumplings.
