  • 2 lb bone-in chicken thighs
  • 1.5 cups all-purpose flour for dumplings
  • 4 cups chicken broth
  • 1 cup whole milk
  • 2 tbsp unsalted butter for sautéing vegetables
  • 2 pcs carrots chopped
  • 2 pcs celery stalks chopped
  • 1 pcs medium onion diced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp baking powder for dumplings
  • 0.5 cup water for dumpling dough

Instructions

Preparation Steps

  • In a large pot, melt the butter over medium heat. Add diced onion, chopped carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
  • Add chicken thighs to the pot and pour in the chicken broth. Season with salt and black pepper. Bring to a simmer and cook until chicken is fully cooked, about 30 minutes.
  • Remove chicken from broth, shred the meat, and discard bones. Return shredded chicken to the pot.
  • In a bowl, mix all-purpose flour, baking powder, and a pinch of salt. Add water and milk gradually to form a soft dough for dumplings.
  • Drop spoonfuls of dumpling dough onto simmering broth. Cover and cook for 15 minutes without lifting the lid.
  • Once dumplings are cooked through and fluffy, serve hot with the chicken and vegetable broth.

Notes

For extra flavor, add fresh thyme and parsley to the broth before simmering.
