Preparation Steps
Preheat your oven to 140°F (60°C) or the lowest temperature possible.
Puree the chopped strawberries, lemon juice, and honey in a blender until smooth.
Line a baking sheet with a silicone mat or parchment paper and spread the fruit puree evenly in a thin layer.
Bake for 6 hours or until the fruit leather is dry and no longer sticky to the touch.
Let it cool completely, then peel off the mat and cut into strips. Roll up the strips with parchment paper for storage.
Notes
Store the fruit leather in an airtight container at room temperature for up to 2 weeks or freeze for longer storage.
