Preparation Steps
Preheat oven to 200°F (93°C) and line two baking sheets with parchment paper.
Wash and core apples, then slice them very thinly (about 1/8 inch) using a mandoline or sharp knife.
Toss apple slices gently in a bowl with lemon juice to prevent browning.
Arrange apple slices in a single layer on the prepared baking sheets without overlapping.
Sprinkle cinnamon and sugar evenly over the apple slices.
Bake for 90 minutes, flipping apple slices halfway through baking time for even crispiness.
Remove from oven and let apple chips cool completely on wire racks; they will crisp up as they cool.
