  • Wash and core apples, then slice them very thinly (about 1/8 inch) using a mandoline or sharp knife.
  • Toss apple slices gently in a bowl with lemon juice to prevent browning.
  • Arrange apple slices in a single layer on the prepared baking sheets without overlapping.
  • Sprinkle cinnamon and sugar evenly over the apple slices.
  • Bake for 90 minutes, flipping apple slices halfway through baking time for even crispiness.
  • Remove from oven and let apple chips cool completely on wire racks; they will crisp up as they cool.
