Instructions
Preparation Steps
In a blender, combine the strawberries, 1/2 cup of sugar, and lemon juice. Blend until smooth. Pour into a bowl and set aside.
In a large mixing bowl, whip the heavy cream with the remaining sugar and vanilla extract until soft peaks form.
Gently fold the strawberry puree into the whipped cream until well combined.
In a separate bowl, mix the graham cracker crumbs with the melted butter.
Press the graham cracker mixture into the bottom of an 8x8-inch pan.
Spread the strawberry mixture evenly over the crust. Cover and freeze for at least 4 hours or until firm.
Cut into squares and serve frozen.
Notes
This dessert can be stored in the freezer for up to a month. Just ensure it's well-covered to prevent freezer burn.
