  • 8 oz semisweet chocolate chips
  • 0.5 cup heavy cream warm
  • 2 tbsp champagne
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1 tbsp unsweetened cocoa powder for coating

Preparation Steps

  • Place chocolate chips in a heatproof bowl.
  • Heat the heavy cream until just simmering and pour over the chocolate. Let sit for 2 minutes.
  • Stir until chocolate is completely melted and smooth.
  • Add champagne, vanilla extract, and salt. Mix well.
  • Refrigerate mixture for at least 2 hours until firm enough to scoop.
  • Using a teaspoon, scoop truffle mixture and roll into balls.
  • Roll truffles in cocoa powder to coat.
  • Store truffles in an airtight container in the refrigerator until ready to serve.
