Instructions
Preparation Steps
Place chocolate chips in a heatproof bowl.
Heat the heavy cream until just simmering and pour over the chocolate. Let sit for 2 minutes.
Stir until chocolate is completely melted and smooth.
Add champagne, vanilla extract, and salt. Mix well.
Refrigerate mixture for at least 2 hours until firm enough to scoop.
Using a teaspoon, scoop truffle mixture and roll into balls.
Roll truffles in cocoa powder to coat.
Store truffles in an airtight container in the refrigerator until ready to serve.
Notes
For best flavor, serve chilled and enjoy with a glass of your favorite champagne.
