  • Slowly pour the cornstarch slurry into the broth while stirring constantly until the soup thickens slightly.
  • Reduce heat to low. Slowly drizzle the beaten eggs into the soup in a thin stream while stirring gently to create silky ribbons.

Notes

For a richer flavor, substitute half of the chicken broth with vegetable broth or add a few drops of toasted sesame oil before serving.
