Ingredients

Main Ingredients

  • 1 lb fresh spinach
  • 0.5 cup diced onion
  • 0.25 cup olive oil
  • 0.75 lb feta cheese crumbled
  • 3 each large eggs
  • 8 oz phyllo dough sheets thawed if frozen
  • 0.25 cup melted butter
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • Rinse and chop fresh spinach. In a large skillet, heat olive oil and sauté diced onions until soft.
  • Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool.
  • In a large bowl, beat eggs, then mix in crumbled feta cheese, cooled spinach mixture, salt, and black pepper.
  • Brush the bottom and sides of a 9x13 inch baking dish with melted butter. Layer 4 sheets of phyllo dough, brushing each sheet with butter.
  • Spread the spinach and cheese filling evenly over the phyllo layer.
  • Cover the filling with 4 more sheets of phyllo dough, brushing each with butter.
  • Using a sharp knife, score the top layer of phyllo into squares to make slicing easier after baking.
  • Bake for 40-45 minutes or until golden brown and crisp. Let cool for 10 minutes before serving.
