Instructions
Preparation Steps
Preheat the oven to 350°F (175°C).
Rinse and chop fresh spinach. In a large skillet, heat olive oil and sauté diced onions until soft.
Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool.
In a large bowl, beat eggs, then mix in crumbled feta cheese, cooled spinach mixture, salt, and black pepper.
Brush the bottom and sides of a 9x13 inch baking dish with melted butter. Layer 4 sheets of phyllo dough, brushing each sheet with butter.
Spread the spinach and cheese filling evenly over the phyllo layer.
Cover the filling with 4 more sheets of phyllo dough, brushing each with butter.
Using a sharp knife, score the top layer of phyllo into squares to make slicing easier after baking.
Bake for 40-45 minutes or until golden brown and crisp. Let cool for 10 minutes before serving.
Notes
Spanakopita can be served warm or at room temperature and makes an excellent appetizer or main dish.
