Instructions
Preparation Steps
Wash and dry the salad greens thoroughly and place them in a large salad bowl.
Core and slice the pears into thin wedges; add to the salad bowl.
In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well emulsified.
Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
Sprinkle chopped toasted walnuts and crumbled blue cheese over the top just before serving.
Notes
For a vegan option, omit the blue cheese and substitute with toasted sunflower seeds or vegan cheese.
