  • 1 tablespoon honey adjust to taste
  • 0.5 teaspoon Dijon mustard
  • 0.25 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly ground

Preparation Steps

  • Wash and dry the salad greens thoroughly and place them in a large salad bowl.
  • Core and slice the pears into thin wedges; add to the salad bowl.
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well emulsified.
  • Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
  • Sprinkle chopped toasted walnuts and crumbled blue cheese over the top just before serving.

Notes

For a vegan option, omit the blue cheese and substitute with toasted sunflower seeds or vegan cheese.
