Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning.
Cook chicken breasts for 5-7 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Add sun-dried tomatoes and baby spinach, cooking until spinach wilts.
Reduce heat to low and stir in heavy cream and Parmesan cheese. Simmer until sauce thickens slightly.
Return chicken breasts to the skillet, spoon sauce over them and cook for an additional 2-3 minutes.
Serve hot with your choice of side dish.
Notes
For extra flavor, garnish with fresh basil leaves before serving.
