  • 4 pieces boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup sun-dried tomatoes chopped
  • 2 cups baby spinach fresh
  • 1.5 cups heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground

Instructions

Preparation Steps

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning.
  • Cook chicken breasts for 5-7 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  • Add sun-dried tomatoes and baby spinach, cooking until spinach wilts.
  • Reduce heat to low and stir in heavy cream and Parmesan cheese. Simmer until sauce thickens slightly.
  • Return chicken breasts to the skillet, spoon sauce over them and cook for an additional 2-3 minutes.
  • Serve hot with your choice of side dish.

Notes

For extra flavor, garnish with fresh basil leaves before serving.
