0.5cupcreamy peanut butter
0.25cupcoconut milk
1tbspred curry paste

In a bowl, combine chicken thighs, soy sauce, brown sugar, lime juice, garlic, and ground coriander. Marinate for at least 30 minutes.
Thread the marinated chicken onto soaked wooden skewers, dividing evenly.
Preheat a grill or grill pan over medium-high heat. Grill chicken skewers for about 5 minutes on each side until cooked through.
While chicken cooks, whisk together peanut butter, coconut milk, red curry paste, brown sugar, fish sauce, and lime juice in a small saucepan. Heat gently until warm and smooth.
