  • 1 lb boneless skinless chicken thighs
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar packed
  • 1 tbsp fresh lime juice
  • 3 cloves garlic minced
  • 1 tsp ground coriander
  • 12 each wooden skewers soaked in water for 30 minutes

Peanut Sauce

  • 0.5 cup creamy peanut butter
  • 0.25 cup coconut milk
  • 1 tbsp red curry paste
  • 1 tbsp brown sugar
  • 2 tsp fish sauce
  • 1 tsp lime juice

Instructions

Preparation Steps

  • In a bowl, combine chicken thighs, soy sauce, brown sugar, lime juice, garlic, and ground coriander. Marinate for at least 30 minutes.
  • Thread the marinated chicken onto soaked wooden skewers, dividing evenly.
  • Preheat a grill or grill pan over medium-high heat. Grill chicken skewers for about 5 minutes on each side until cooked through.
  • While chicken cooks, whisk together peanut butter, coconut milk, red curry paste, brown sugar, fish sauce, and lime juice in a small saucepan. Heat gently until warm and smooth.
  • Serve grilled chicken satay hot with the peanut sauce on the side for dipping.

Notes

For best results, soak the wooden skewers to prevent burning and serve the satay with fresh cucumber slices and jasmine rice.
