In a medium bowl, whisk together olive oil, soy sauce, honey, garlic, lemon juice, black pepper, and salt until well combined.
Place chicken breasts in a ziplock bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for at least 30 minutes or up to 4 hours.
Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard excess marinade.
Cook chicken for 6-8 minutes per side or until fully cooked and juices run clear.
Let chicken rest for 5 minutes before slicing and serving.

For extra flavor, add fresh herbs like rosemary or thyme to the marinade.
