Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken cubes and cook until no longer pink, about 5-7 minutes. Remove chicken and set aside.
In the same skillet, add the remaining oil and sauté the garlic and onion until fragrant and softened, about 2-3 minutes.
Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
