  • 1 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground

  • Cut the fresh cod fillets into small bite-sized pieces and place them in a glass bowl.
  • Pour the lime and lemon juice over the cod, ensuring the pieces are fully submerged. Cover and refrigerate for 15 minutes to 'cook' the fish.
  • Meanwhile, prepare the vegetables by chopping cucumber, dicing red onion, halving cherry tomatoes, and chopping fresh cilantro.
  • After the cod has marinated, gently drain excess liquid, then stir in olive oil, cucumber, onion, tomatoes, cilantro, salt, and pepper.
