Preheat the Blackstone griddle over medium-high heat for 5 minutes.
In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and black pepper to create the seasoning blend.
Coat the chicken thighs evenly with the seasoning blend.
Place the chicken thighs skin-side down on the griddle and cook for 7 minutes without moving to get crispy skin.
Flip the chicken and cook for an additional 8 minutes or until the internal temperature reaches 165°F (74°C).
Remove chicken from the griddle and let it rest for 5 minutes before serving.
