Instructions
Preparation Steps
Preheat oven to 325°F (160°C). Combine vanilla wafer crumbs with melted butter and press into the bottom of a 9-inch springform pan.
In a large bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition.
Blend in vanilla extract and prepared banana pudding mix until fully incorporated.
Arrange sliced bananas over the crust evenly. Pour cheesecake batter over bananas, smoothing the top.
Bake for 45 minutes or until center is set but still slightly jiggly. Allow to cool completely.
Chill in the refrigerator at least 4 hours before serving. Top with whipped cream before serving.
Notes
For best results, use ripe bananas and chill overnight for a firmer texture. Garnish with extra vanilla wafers if desired.
