  • 1.5 cups vanilla wafer crumbs
  • 0.25 cups unsalted butter, melted
  • 3 cups ripe bananas, sliced
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 eggs large eggs
  • 1 cup banana pudding mix instant, prepared as directed
  • 1 cup whipped cream for topping

Instructions

Preparation Steps

  • Preheat oven to 325°F (160°C). Combine vanilla wafer crumbs with melted butter and press into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition.
  • Blend in vanilla extract and prepared banana pudding mix until fully incorporated.
  • Arrange sliced bananas over the crust evenly. Pour cheesecake batter over bananas, smoothing the top.
  • Bake for 45 minutes or until center is set but still slightly jiggly. Allow to cool completely.
  • Chill in the refrigerator at least 4 hours before serving. Top with whipped cream before serving.

Notes

For best results, use ripe bananas and chill overnight for a firmer texture. Garnish with extra vanilla wafers if desired.
