  • 1 cup mashed ripe bananas Use overripe bananas for best flavor.
  • 0.5 cup sugar
  • 0.5 cup butter, melted Not too hot.
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup chopped walnuts

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix the mashed bananas, sugar, and melted butter until well combined.
  • Add the eggs and mix until smooth.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Fold in the chopped walnuts.
  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes or until a toothpick comes out clean.
  • Let them cool in the pan for a few minutes, then transfer to a wire rack.

Notes

Store in an airtight container for up to three days. These muffins also freeze well!
