Instructions
Preparation Steps
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mix the mashed bananas, sugar, and melted butter until well combined.
Add the eggs and mix until smooth.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Fold in the chopped walnuts.
Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
Bake for 18-20 minutes or until a toothpick comes out clean.
Let them cool in the pan for a few minutes, then transfer to a wire rack.
Notes
Store in an airtight container for up to three days. These muffins also freeze well!
