  • 2 lb boneless skinless chicken breasts
  • 3 cups heavy cream use full fat for best results
  • 1.5 cups parmesan cheese freshly grated
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 8 oz fettuccine pasta uncooked
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 1 tbsp chopped fresh parsley for garnish

Instructions

Preparation Steps

  • Place the chicken breasts in the bottom of the slow cooker.
  • Add the minced garlic, butter, heavy cream, salt, and pepper over the chicken.
  • Cover and cook on low for 4 hours until the chicken is cooked through and tender.
  • Remove chicken breasts and shred them using two forks.
  • Return shredded chicken to the slow cooker and stir in the grated parmesan cheese.
  • Cook fettuccine pasta according to package instructions; drain well.
  • Add the cooked pasta to the slow cooker and mix well to coat pasta with the sauce.
  • Garnish with chopped parsley and serve immediately.

Notes

For a richer flavor, use freshly grated parmesan cheese and full-fat heavy cream. You can add steamed broccoli for a veggie boost.
