Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add chopped carrots and celery to the pot. Cook for 5 minutes, stirring occasionally.
Pour in vegetable broth and bring the mixture to a boil. Reduce heat and let simmer for 20 minutes, or until vegetables are tender.
Stir in chopped kale, sea salt, and black pepper. Cook for an additional 5 minutes until kale is wilted.
