  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 6 cups chicken broth low sodium
  • 14.5 oz diced tomatoes with green chilies
  • 1 tsp cumin ground
  • 1 tsp chili powder
  • 2 cups cooked chicken shredded
  • 1 cup corn kernels frozen or canned
  • 1 cup black beans drained and rinsed
  • 1 large lime juice
  • 1 cup tortilla strips for garnish
  • 0.25 cup cilantro chopped, for garnish
  • 0.5 cup cheddar cheese shredded, for garnish

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  • Add minced garlic and cook for another minute.
  • Stir in the chicken broth, diced tomatoes, cumin, and chili powder. Bring to a simmer.
  • Add the shredded chicken, corn, and black beans. Simmer for 10-15 minutes.
  • Stir in lime juice and season with salt and pepper to taste.
  • Serve hot, garnished with tortilla strips, chopped cilantro, and shredded cheddar cheese.

Notes

Adjust the level of heat by adding more or less chili powder according to your taste. For a thicker soup, add 2 tablespoons of tomato paste along with the broth.
