  • 1.5 lb boneless skinless chicken breasts
  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 1 tsp dried thyme
  • 0.25 tsp red pepper flakes optional
  • 1 cup fresh spinach chopped
  • salt to taste
  • black pepper to taste

Instructions

Preparation Steps

  • Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper.
  • Cook chicken until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
  • In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
  • Add heavy cream, parmesan cheese, dried thyme, and red pepper flakes. Stir and cook until sauce thickens slightly, about 4 minutes.
  • Add gnocchi to the sauce and cook according to package instructions, usually 2-3 minutes, until gnocchi float to the top.
  • Stir in chopped spinach and sliced chicken, cooking until spinach wilts.
  • Serve hot and garnish with extra parmesan if desired.

Notes

You can substitute spinach with kale for a different leafy green flavor. Adjust red pepper flakes to control spice level.
