Instructions
Preparation Steps
Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper.
Cook chicken until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
Add heavy cream, parmesan cheese, dried thyme, and red pepper flakes. Stir and cook until sauce thickens slightly, about 4 minutes.
Add gnocchi to the sauce and cook according to package instructions, usually 2-3 minutes, until gnocchi float to the top.
Stir in chopped spinach and sliced chicken, cooking until spinach wilts.
Serve hot and garnish with extra parmesan if desired.
Notes
You can substitute spinach with kale for a different leafy green flavor. Adjust red pepper flakes to control spice level.
