  • 0.5 teaspoon baking powder
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon fine salt
  • 1 tablespoon mini chocolate chips optional

  • Lightly grease a microwave-safe 12 to 14 ounce mug with nonstick spray.
  • Add the banana to the mug and mash until very smooth.
  • Whisk in melted butter, milk, vanilla, brown sugar, salt, and cinnamon until well combined.
  • Add flour and baking powder. Stir just until no dry streaks remain; do not overmix.
  • Fold in chocolate chips, if using, and smooth the top.
  • Microwave on high for 60 to 90 seconds, checking at 60 seconds. The cake is done when the top looks set but still springy. Add 10 to 15 second bursts if needed.
  • Let rest 1 minute to finish setting. Enjoy warm straight from the mug.

Notes

Use a very ripe banana with lots of brown spots for the best sweetness and flavor. Microwave wattages vary, so start low and add short bursts to avoid overcooking. Swap butter for 1.0 tablespoon neutral oil for a dairy-free option, and adjust sugar to taste.
