Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine ricotta and mozzarella cheese.
Spread a thin layer of marinara sauce on the bottom of a baking dish.
Layer uncooked noodles, a portion of the ricotta mixture, chopped vegetables, and sauce. Repeat layers.
Top with remaining mozzarella cheese.
Cover with foil and bake in the preheated oven for 30 minutes. Remove foil and bake for an additional 15 minutes.
Allow to cool for 10 minutes before serving.

You can customize the vegetables in this recipe by adding your favorites, like bell peppers or eggplant for extra flavor.
