Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
Add chopped onion and garlic to the pot. Cook until they are softened.
Pour in beef broth, and add carrots, celery, potatoes, and diced tomatoes. Stir in thyme, oregano, salt, and pepper.
Bring to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.
Add green beans and simmer for another 20 minutes until all vegetables are tender.
Garnish with fresh parsley before serving.
Notes
For a thicker soup, you can mash some of the potatoes before serving.
