  • 2 tbsp olive oil extra virgin for best flavor
  • 1.5 lb beef chuck cut into bite-sized pieces
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 4 cups beef broth low sodium
  • 1 cup carrot sliced
  • 1 cup celery chopped
  • 1 cup potato diced
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 1 cup green beans trimmed and cut into 1 inch pieces
  • 0.25 cup parsley chopped

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
  • Add chopped onion and garlic to the pot. Cook until they are softened.
  • Pour in beef broth, and add carrots, celery, potatoes, and diced tomatoes. Stir in thyme, oregano, salt, and pepper.
  • Bring to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.
  • Add green beans and simmer for another 20 minutes until all vegetables are tender.
  • Garnish with fresh parsley before serving.

Notes

For a thicker soup, you can mash some of the potatoes before serving.
