  • 3.5 cups peeled and diced potatoes
  • 1 cup mayonnaise use full-fat for best texture
  • 0.5 cup diced celery
  • 0.25 cup chopped green onions
  • 2 tbsp apple cider vinegar
  • 1.5 tsp Dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 2 tbsp chopped fresh parsley

Preparation Steps

  • Place diced potatoes in a large pot and cover with cold water. Bring to a boil and cook for 10-12 minutes until tender but firm.
  • Drain potatoes and rinse briefly with cold water to stop cooking. Let cool completely.
  • In a large mixing bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper to make the dressing.
  • Add cooled potatoes, celery, green onions, and parsley to the dressing. Gently fold to combine without mashing the potatoes.
  • Chill the potato salad in the refrigerator for at least 1 hour before serving to meld flavors.

Notes

For best results, make the potato salad a day ahead. You can also add chopped hard-boiled eggs for extra protein.
