Instructions
Preparation Steps
Place diced potatoes in a large pot and cover with cold water. Bring to a boil and cook for 10-12 minutes until tender but firm.
Drain potatoes and rinse briefly with cold water to stop cooking. Let cool completely.
In a large mixing bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper to make the dressing.
Add cooled potatoes, celery, green onions, and parsley to the dressing. Gently fold to combine without mashing the potatoes.
Chill the potato salad in the refrigerator for at least 1 hour before serving to meld flavors.
Notes
For best results, make the potato salad a day ahead. You can also add chopped hard-boiled eggs for extra protein.
