Instructions
Preparation Steps
In a large mixing bowl, beat the softened butter until creamy.
Gradually mix in the heavy cream, peppermint extract, and vanilla extract until smooth.
Slowly add in the powdered sugar, about 1 cup at a time, mixing well after each addition.
If using, add the food coloring and mix until evenly distributed.
Roll the mixture into small balls, then place on a baking sheet lined with parchment paper.
Gently flatten each ball with a fork.
Allow mints to dry at room temperature for at least 8 hours or overnight.
Notes
Feel free to adjust the amount of peppermint extract to suit your taste. If you prefer a stronger mint flavor, add a little more extract.
