Instructions
Preparation Steps
Preheat oven to 350°F. Rub beef with salt and pepper.
In a large skillet, sear beef on all sides. Transfer to a roasting pan.
Roast in the oven for 25-30 minutes, until tender.
Meanwhile, simmer beef broth in a saucepan and pour over roasted beef.
Slice beef thinly and divide among baguettes. Top with Provolone cheese.
Pour cooking juice into small bowls for dipping. Serve sandwiches warm.
Notes
For extra flavor, add a touch of horseradish sauce to the sandwich.
