  • 1.5 pounds beef chuck roast trimmed of excess fat
  • 4 baguettes sliced in half
  • 8 slices Provolone cheese
  • 2 cups beef broth low sodium
  • 1 teaspoon black pepper freshly ground

Instructions

Preparation Steps

  • Preheat oven to 350°F. Rub beef with salt and pepper.
  • In a large skillet, sear beef on all sides. Transfer to a roasting pan.
  • Roast in the oven for 25-30 minutes, until tender.
  • Meanwhile, simmer beef broth in a saucepan and pour over roasted beef.
  • Slice beef thinly and divide among baguettes. Top with Provolone cheese.
  • Pour cooking juice into small bowls for dipping. Serve sandwiches warm.

Notes

For extra flavor, add a touch of horseradish sauce to the sandwich.
