  • 6 cups sweet potatoes peeled and cubed
  • 0.5 cup brown sugar packed
  • 1 tsp cinnamon ground
  • 0.5 tsp nutmeg ground
  • 1 tsp vanilla extract
  • 0.25 cup butter melted
  • 1 pinch salt
  • 2 cups mini marshmallows

Instructions

Preparation Steps

  • In a crockpot, combine the sweet potatoes, brown sugar, cinnamon, nutmeg, vanilla extract, melted butter, and salt. Stir to coat the sweet potatoes evenly.
  • Cover and cook on low for 4 hours or until the sweet potatoes are tender.
  • Once cooked, stir the potatoes again and then spread the mini marshmallows over the top in an even layer. Cover and cook for an additional 10-15 minutes, until the marshmallows are melted.

Notes

For an extra touch, broil the dish for a couple of minutes in the oven to brown the marshmallows before serving.
