  • 2 pounds beef chuck roast trimmed of excess fat
  • 1 packet ranch dressing mix about 1 ounce
  • 1 packet au jus gravy mix about 1 ounce
  • 1 stick unsalted butter
  • 6 whole pepperoncini peppers plus additional for garnish if desired
  • 2 cups beef broth low-sodium preferred
  • 12 ounces egg noodles uncooked

Instructions

Preparation Steps

  • Place the beef roast in the bottom of a slow cooker.
  • Sprinkle the ranch dressing mix and au jus gravy mix over the roast.
  • Place the stick of butter on top of the roast and arrange the pepperoncini peppers around it.
  • Pour the beef broth into the slow cooker.
  • Cover and cook on low for 8 hours, or until the beef is tender.
  • Remove the beef from the slow cooker and shred with two forks.
  • Return the shredded beef to the slow cooker and add the egg noodles.
  • Stir to combine and cook on high for an additional 30 minutes, or until the noodles are tender.

Notes

You can add more or fewer pepperoncini peppers based on your spice preference. Serve with a side salad or crusty bread for a complete meal.
