  • 1 lb ground beef lean
  • 4 cups potatoes peeled and diced
  • 1 medium onion diced
  • 1 packet taco seasoning
  • 2 cups shredded cheese Mexican blend
  • 1 cup salsa mild or hot according to preference
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

Preparation Steps

  • In a large skillet over medium heat, brown the ground beef. Drain excess fat.
  • Add the diced onion to the beef and sauté until translucent.
  • Place the potatoes in the bottom of the crockpot.
  • Layer the cooked beef and onion over the potatoes.
  • Sprinkle taco seasoning over the beef mixture.
  • Add salsa, black beans, and corn. Stir to combine.
  • Cook on low for 4 hours or until potatoes are tender.
  • 15 minutes before serving, sprinkle cheese on top. Cover until melted.

Notes

Serve hot and garnish with freshly chopped cilantro or green onions for added flavor.
