Instructions
Preparation Steps
In a large skillet over medium heat, brown the ground beef. Drain excess fat.
Add the diced onion to the beef and sauté until translucent.
Place the potatoes in the bottom of the crockpot.
Layer the cooked beef and onion over the potatoes.
Sprinkle taco seasoning over the beef mixture.
Add salsa, black beans, and corn. Stir to combine.
Cook on low for 4 hours or until potatoes are tender.
15 minutes before serving, sprinkle cheese on top. Cover until melted.
Notes
Serve hot and garnish with freshly chopped cilantro or green onions for added flavor.
