  • 4 pound whole chicken giblets removed
  • 2 tablespoon olive oil
  • 2 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 6 clove garlic smashed
  • 1 teaspoon paprika
  • 1 teaspoon thyme dried
  • 1 lemon lemon halved
  • 1 cup chicken broth

Preparation Steps

  • Rinse the chicken and pat dry with paper towels. Place it in the slow cooker.
  • In a small bowl, mix olive oil, salt, pepper, garlic, paprika, and thyme. Rub this mixture over the chicken, including under the skin.
  • Place the lemon halves inside the chicken cavity.
  • Pour the chicken broth around the base of the chicken.
  • Cover and cook on low for 4-5 hours, or until the chicken is cooked through and tender.
  • Carefully remove the chicken from the slow cooker. Let it rest for a few minutes before carving.

Notes

For a crispier skin, place the cooked chicken under a broiler for a few minutes before serving. Serve with your favorite side dishes.
