Instructions
Preparation Steps
Rinse the chicken and pat dry with paper towels. Place it in the slow cooker.
In a small bowl, mix olive oil, salt, pepper, garlic, paprika, and thyme. Rub this mixture over the chicken, including under the skin.
Place the lemon halves inside the chicken cavity.
Pour the chicken broth around the base of the chicken.
Cover and cook on low for 4-5 hours, or until the chicken is cooked through and tender.
Carefully remove the chicken from the slow cooker. Let it rest for a few minutes before carving.
Notes
For a crispier skin, place the cooked chicken under a broiler for a few minutes before serving. Serve with your favorite side dishes.
